The best juice is whole-bunch pressed directly to barrel without settling. Fermentation is spontaneous with no sulphur, allowing diverse micro-organisms to thrive. The wine matures for 11 months in 40% new burgundy barrels, then 5 months in old oak. No fining, coarse filtration, or sulphur adjustment is done before bottling.
